Fruity Pear Mincemeat

Ingredients

  • 1 orange, zest
  • 750 g pears, peeled, cored and quartered
  • 250 g sugar
  • 175 g craisins
  • 200 g currants
  • 50 g Glacé ginger, chopped
  • 120 g flaked almonds
  • juice 1 orange
  • juice 1 lemon
  • 3 teaspoon ground mixed spice
  • 2 tablespoon brandy, (optional)

Recipe's preparation

  1. Put equals quantities of cardamom, cinnamon, cloves and nutmeg into mixing bowl and pulverize for 2 minutes/Speed 9. Set aside in an airtight container.

  2. Place orange zest into mixing bowl and mince for 10 sec/speed 7.

  3. Add pears and sugar and chop for 2-3 sec/speed 6.

  4. Add remaining ingredients except brandy and cook for 35 min/varoma temperature/Counter-clockwise operation/speed 1. Cool slightly and  stir brandy through. Sterilize 3 or 4 glass jars and lids using boiling water. Fill jars with mincemeat and store until ready for use in mince tarts, stuffed apples etc.

  5. Roll pastry into large flan tin or press into smaller tart cases. Top pastry with fruity pear mince and Marzipan Stars. Brush with a little beaten egg.

  6. Cook large tart for 30-40 minutes or 10 minutes for tartlets.

  7. Cool and dust with icing sugar and

Tip

Not a fan of pear? Change the fruit inside to something you prefer. Cherry or Apple could provide a great new flavour for the family to try.
