Fudge Cookies with Ground Cacao Beans

Ingredients

Fudge Cookie Dough

  • 40 grams ground cacao beans or prepackaged brewed chocolate
  • 140 grams Organic Dates (pitted)
  • 140 grams Rapadura Sugar
  • 20 grams raw cacao powder
  • 200 grams spelt flour
  • 1/2 teaspoon Organic baking powder (gluten free)
  • 1 teaspoon baking soda
  • 150 grams Butter, softened
  • 1 Organic free range Eggs

Recipe's preparation

    Fudge Cookies
  1. Mill Crio Bru for 20 seconds @ Speed 9.

  2. Add dates and mill 20 seconds @ Speed 9.

  3. Add cacao powder and rapadura. Mill 10 seconds @ Speed 9.

  4. Add spelt flour, baking powder and baking soda - 'sift' 10 seconds @ Speed 6.

  5. Add butter and begin to bring dough together using Turbo setting (4-6 times), scraping down as necessary.

  6. Add egg and finish bringing dough together using Interval setting for 20-30 seconds, scraping down as necessary.

  7. Drop walnut-sized balls of dough onto a lined baking sheet, allowing room to spread.

  8. Bake at 180C for 10-12 minutes. (NOTE: They may still be 'puffy' instead of 'flat' at this point but they will settle as they cool!)

  9. Cool on the baking sheet for at least 5 minutes before transferring to a wire rack to cool completely (if you don't eat them all first!).
