cake batter

  • 3 lemons, unpeeled
  • 180 g ground almonds
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 5 eggs

Recipe's preparation

  1. Place the lemons in the thermomix bowl & cover with water. Cook on reverse for 20 min / 100'C / slowest speed (spoon speed).  Tip lemons into simmering basket. Cool & drain.

    Preheat oven to 150'C.  Line an 18 - 20ccm baking tin with baking paper.

    Mix the almonds, sugar, baking powder and eggs for 20 seconds / speed 3.  Tip into a large bowl and set aside.  Put the cooled lemons into the thermomix & puree for 10 seconds / speed 10.  Add the remainder of the mixture & combine for 20 seconds / speed 3.

    Pour into the prepared tin & bake for 1 hour or until a skewer inserted into the middle of the cake comes out clean.  Take out of oven and tip onto a cooling rack.

Cooking and cooling the lemons is the most time consuming part, so if you cook them in advance, the recipe will take no time at all to do!

    The cake did not cook within an hour at 150 °. I increased the temperature to 180° and cooked it for a further 20 minutes.
