- 3 lemons, unpeeled
- 180 g ground almonds
- 1/2 cup sugar
- 1 tsp baking powder
- 5 eggs

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
Place the lemons in the thermomix bowl & cover with water. Cook on reverse for 20 min / 100'C / slowest speed (spoon speed). Tip lemons into simmering basket. Cool & drain.
Preheat oven to 150'C. Line an 18 - 20ccm baking tin with baking paper.
Mix the almonds, sugar, baking powder and eggs for 20 seconds / speed 3. Tip into a large bowl and set aside. Put the cooled lemons into the thermomix & puree for 10 seconds / speed 10. Add the remainder of the mixture & combine for 20 seconds / speed 3.
Pour into the prepared tin & bake for 1 hour or until a skewer inserted into the middle of the cake comes out clean. Take out of oven and tip onto a cooling rack.

Cooking and cooling the lemons is the most time consuming part, so if you cook them in advance, the recipe will take no time at all to do!
