Profiterole

  • 250 g water
  • pinch Himalayan salt
  • 60 g coconut oil
  • 150 g wholemeal spelt flour
  • 4 eggs

Chocolate custard

  • 500 g Oat Milk
  • 60 g Rapadura Sugar
  • 1 teaspoon Bee pollen, optional
  • 30 g arrowroot flour
  • 20 g cacao powder
  • 2 eggs

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    PROFITEROLE
  1. Pre-heat oven to 180-200 degrees. Line two baking trays with baking paper or thermomat and set aside.

    Place water, salt and coconut oil into TM bowl and cook for 10 min at 100 degrees on speed 2.

    Add spelt flour and mix for 30-40 seconds on speed 4, untill the pastry move away from sides of the bowl. Let cool for 10 minutes.

    Add eggs to the muxture by dropping one egg at a time through hole in lid as you mix for 30-40 seconds on speed 5.

    Sppon mixture into Ziploc bag with corner snipped off or use ice cream scoop to dollop pastry onto trays.

    Bake for 15 minutes or until puffed and golden. Leave to cool before insert filling.

     

  2. Chocolate custard filling

     

    Add al ingredients into TM bowl. Heat for 7 minutes, 100 degrees on speed 4.
