Tried this recipe yesterday with huge success. It's definitely different to a normal lemon meringue pie but with a really sweet cheesecake feel to the filling.

    Loved it. Thank you

Not sure if I will get a reply in time but here goes!
Just made the base and the filling, put in fridge for 10 mins and it's now sitting on the bench.
This pie is for tomorrow night, so reading tips from google (ha) it says leave on bench so it doesnt weep.
I'll make the meringue tomorrow and then put it in the fridge before taking and serving at room temp.

Is that all okay to do?

Also, a person below asked if sweetened condensed milk adn condensed milk are the same. They're not. I only bought sweetened condensed milk so I made my own. How good is thermomix. I'll add the link for condensed milk below.

I know I'm too late however I'm sure you could. You could then torch your meringue before serving. It's not really cooking the curd it's more just warming it through. Cheers

OMGsh - awesome! I baked half the recipe & made 5 muffin size individual servings. I only let them cool for 10 mins before I had to try. Filling was not too runny at all but I think I’ll have to wait until I can safely get them out of the muffin tin....

This was a great recipe. The meringue was spectacular, the filling was a great flavour yet not exactly what I expected, and the base was simple and suited the dish well. It looked great up to that moment when I accidentally dropped something on top of it! Adding to my favourites.

Very nice - the meringue was excellent. can you please add instructions for melting the butter for the base as I placed the biscuit/lemon rind in a bowl and without washing bowl I melted for 3mins/50c/speed 3. Much easier/less dishes to do it in the thermie than microwave.

The flavours in this lemon meringue are really nice but I have rated it this way because it was nowhere near "warm" after 7-10 mins. I am not a fan of raw egg so I had to keep adding time to it in the oven and this ended up being time-consuming with a meringue top which was brown. if I hadnt done this I would've ended up with very runny raw filling. Sorry, bit disappointed :-/

Oh that's no good for you. The middle actually becomes runnier the hotter it gets & then as it cools down becomes firm. I guess just turn your oven down a little & put it in for twice as long. I have been cooking this for people for decades like this however & I have to be honest when I say it's definitely a crowd pleaser cooked as this recipe says. I hope you give it another go & get a winner for your liking?
