Lemon Semifreddo

  • 6 large egg yolks
  • 1 tbsp lemon zest
  • 1/2 cup lemon juice
  • 1/2 tsp salt
  • 1 1/2 cups sugar
  • 2 cups thickened cream

Recipe's preparation

    Lemon Zest
  1. Peel your lemon with a potato peeler ensuring that the white pith is not included. Place the lemon skin in the TM for 20 seconds at speed 6. Remove excess zest from TM bowl.

  2. Semifreddo
  3. Insert Butterfly. Place egg yolks, lemon juice, salt and 1 cup of sugar in TM bowl with lemon zest. Whisk for 15 minutes at 50 degrees at speed 4 or until mixture becomes opaque and has thickened slightly.

    Pour through sieve into bowl. Place piece of plastic wrap directly on the surface of the lemon mixture and refrigerate until completely cool (at least 2 hours).

    In clean TM bowl, insert butterfly. Place cream and remaining sugar in TM bowl. Whisk ingredients for 45 seconds at speed 4 or until soft peaks form.

    Reduce from speed 4 to speed 2 and gradually incorporate the lemon mixture (approximately 30 seconds).

    Pour into 6 cup pan or single serve glasses or bowls, cover and freeze until firm (at least 4 hours).
