  • 180 grams vegetable oil

Recipe's preparation

    Cake
  1. 1 Prepare 22cm spring form cake tin and preheat oven to 180degC


    2 Place 250 g raw sugar and zest of one lemon in mixing bowl. Mill 15 sec / speed 9. 


    3 Add eggs, lemon juice, oil, yoghurt and flour and mix 20 sec/ speed 5


    4 Pour mixture into prepared tin and bake 30 min on 180 or until cooked.


     


     


     


     

  2. Topping
  3. Add juice of lemon and caster sugar to mixing bowl 37deg/ 1 min/ speed 2 then pour over still warm cake. Set.


    Best served warm.

    Just great ! I made two small adjustments , added two lots of lemon zest because we love cakes lemony . and I too cooked the lemon with extra lemon juice for longer to melt sugar . Beautiful cake, will definately make again  Love

  • I love cakes with yoghurt in

    I love cakes with yoghurt in them, and this one did not disappoint. Used 200g sugar and added some slices of lemon rind for more flavour and milled together. For the topping I was lazy and just added 60g sugar to the lemon juice rather than using the TM then drizzled over once out of the tin.

    made this tonight and it was yummy. I didnt make the topping as run out of lemons but threw a few blueberrides i had left over in the mix and served  hot with icecream

    The only small comment I have for the author is that there is a discrepancy between the ingredients list and the method/preparation.  The recipe says 300g of raw sugar but the method only calls for 250g.

    Given that the recipe is effectively creating a flavored caster sugar as a base I followed the method rather than the ingredients especially given that 250g is the maximum raw to caster recommended in the Thermomix instructions.

    Perhaps the author could update the recipe as 250g sugar works fine.

    Just made this today and it is so light and delicious! Just curious- Do you add the syrup before removing from the pan or after?  I drizzled it over afterwards once had turned the cake out on the plate.

    Will definitely make this again!
