Mango Coconut Icecream

  • 100 grams sugar
  • 300 grams coconut milk, frozen in ice cube trays
  • 200 grams vanilla low fat yoghurt, frozen in ice cube trays
  • 400 grams mango, frozen in small pieces

Recipe's preparation

    Mango coconut ice cream
  1. Place sugar into TM bowl and pulverise for 10 sec on speed 9 to create icing sugar.

    Add remaining ingredients and mix for 1 minute gradually increasing speed from 1 to 10 until icecream consistency is formed, using spatular to assist.  If ingredients coming direct from freezer, add some milk or yoghurt to help emulsify.

    Either freeze or serve immediately with macadamia shortbread biscuits.

    This recipe is an addaption of Quick blueberry ice cream from everyday cooking p150

    For added coconut bite and flavour, stir through 1/2 cup of toasted desiccated coconut on speed 4 for 5 secs.

    Awesome, will be making this over and over again! The toasted coconut is an added bonus! Just tried this with pineapple, awesome also.
