Mango Coconut Ice Cream

Ingredients

4 portion(s)

  • 350 grams mango flesh, roughly chopped and frozen
  • 1 banana, frozen and halved
  • 100 grams coconut cream

Recipe's preparation

    Dairy Free, Gluten Free, Vegan, Vegetarian
  1. 1. Place mango, banana and coconut cream in TM bowl, process        for 1 minute, speed 9, assisting with spatula if necessary. 

     

    Serve immediately, or for firmer ice scoops transfer to a plastic container and freeze for a further hour. 

     

    Variation: For a more intense banana flavour, use more banana and less mango. For every extra banana added, reduce mango by 100g.

    Just made this for Christmas day tmw. It has a bit too much banana for my taste so made some more with just mango and coconut cream to mix it together and it filled a 1ltr tub which also looks nicer to take with us.

    I usually do mango, banana and yoghurt. I like the substitution of coconut milk for a change. I froze the milk first and only used about  50 g.
