No Bake Easter Egg Slice

Base

  • 200 grams butter shortbread biscuits
  • 90 grams unsalted butter cubed

Filling

  • 400 grams good quality dark chocolate
  • 300 grams cream
  • 2 tablespoons golden syrup
  • 1 heaped tablespoon Butter
  • 80 grams pistachios, chopped
  • 12 smallish easter eggs

Recipe's preparation

    Base
  1. Place broken biscuits & butter cubes into TM

    Pulse (closed lid position) a few times until mixture comes together.

    Press into lined 27cm x 17cm tin & place into fridge to firm.

  2. Filling
  3. Place broken chocolate pieces into TM & grate 10/15 seconds on speed 8.

    Add remaining ingredients (except chopped pistachios) & cook 2 minutes 50 degrees speed 5.

    Once melted sufficiently add pistachios (reserving some for topping) & stir 15 seconds speed 1 using spatula to incorporate.

    Press the easter eggs into your base mixture in tin, putting one in the middle of each space where a slice will be when cut up.

    Pour filling mix over top & sprinkle on the reserved pistachios.

    Set in fridge, then slice up.

    As i left this recipe to the last minute, and couldn't find any caramels Easter eggs on Easter Saturday, I mixed it up a bit and added Ferrero Rocher chocolates instead, and substituted pistachios with toasted slivered almonds.....a delight!   Colder Ferrero's are a bit difficult to get one's mouth around, but the same problem might happen with the Easter eggs also I guess.

    with Ferrero's, you don't have to wait for the excuse of Easter to enjoy either, happy days! tmrc_emoticons.8)
