Ingredients
Pistachio Fancy-nums ice-creams
- 250 grams cashew nuts
- 1 cans coconut milk, or cream
- 125 grams pistachio nuts, no shell
- 125 grams Maple syrup
- 1 level tsp vanilla essence
- 1 pinches salt, to taste
Chocolate
- 400 grams dark chocolate
- 1 level tbsp pistachio, chopped, crushed
- 1 level tbsp flaky sea salt, optional

- Prepare two sets of silicone ice cream moulds by inserting icy pole sticks and set aside.
- Soak cashews in boiling water for 5 minutes. Drain the cashews, then place them in Thermomix machine along with all other ingredients for the ice cream.
- Blend on a high speed until smooth and lump free "Blend" 30 seconds/Speed 8
- Pour the mixture into your fancy-num moulds and freeze for 8 hours or overnight.
- Prepare and place a plate/tray lined with baking paper in the freezer. When frozen remove each fancy-num from the moulds and return them to the freezer on the lined plate.
- Place half the chocolate into mixing bowl and grate 5 seconds / speed 10
- Add the other half chocolate in mixing bowl and grate 5 seconds / speed 10
- Scrape down sides of mixing bowl and melt 5min/60 degrees/speed 2
- Scrape down sides of mixing bowl and melt 2 min/60 degrees/speed 2
- Transfer melted chocolate to a tall glass for dipping. Dip each magnum into the chocolate, let excess drip off and sprinkle over pistachios and salt before the shell hardens.
- Return each fancy-num to the plate in the freezer upon coating. Let them set for 20 minutes before eating. Enjoy!
Store in an airtight container in the freezer for up to 3 months.

For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl. -

Risk of scalding by spraying of hot liquids: Do not exceed the maximum filling quantity and observe the filling level markings of the mixing bowl!
