Raw Lemon and coconut slice

Ingredients

Base

  • 100 grams rolled oats
  • 55 grams Shredded coconut
  • 160 grams Medjool Dates, de-seeded

Filling

  • 70 grams coconut oil melted
  • 75 grams Maple syrup pure
  • 25 grams Shredded coconut
  • 2 bananas
  • Juice of 3 lemons

Recipe's preparation

    Base
  1. 1. In the thermomix bowl add the oats and coconut. 

    2. Blitz on speed 6 for 10 seconds 

    3. Add dates and blitz on speed 7 for 10 15 seconds until dates are chopped and combined. 

    4. Press into a baking paper lined slice tray and place in fridge

  2. Filling
  3. 1. Place all ingredients in thermomix bowl.

    2. Blend speed 6 for 10-15 seconds until smooth

    3. Pour over base and refrigerate overnight.

    Hi, I made this yesterday and it is not even close to being set! Tastes yum, but sloppy and runny, unable to cut it up to serve.
