- 340 grams Milk
- 2 Small Bananas
- 320 grams Self Raising Flour
- 1/2 teaspoon baking powder
- 25 grams Coconut Sugar (or sweetener of choice)
- 2 eggs
- 40 grams Baby Spinach Leaves
- Coconut Oil (for frying)
- Fresh strawberries
- Pure Maple Syrup
Add milk and spinach to bowl and mix for 1 minute on speed 6.
Add bananas and mix for 10 seconds on speed 4.
Add flour, baking powder, coconut sugar, eggs, and mix for 20 seconds on speed 4.
Scrape down sides and mix for a further 3 seconds on speed 4.
Heat coconut oil (approx 1 teaspoon, add more as needed) in a frypan over medium heat.
Pour saucer size amounts of batter onto the hot pan and flip when bubbles rise to the surface. Cook for a further 1-2 minutes or until golden in colour.
Top with fresh strawberries and maple syrup.

These pancakes are fussy toddler tested. They will appear green however there is no spinach taste.
