      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

  1. Add water , Kettle mode 100 degree Celsius
  2. Add rock sugar, 30 min / 95 degree Celsius / Speed 2
  3. Add lemon juice, 10 min / 95 degree Celsius / Speed 2
  4. Leave the sugar water cool down to 37 degree Celsius
  5. Add glutinous rice flour and oil , dough 30 seconds
  6. Divide dough into weight needed depends on your mooncake mould. Normally the ratio is 1filling :1 dough for snow skin moon cake. Using some oil to grease you hand / gloves when process dough.
  7. Roll a dough ball into a thin wrapper. Wrap the filling like you would wrap a dumpling. Pinch off the extra dough formed on top of the filling. Use moon cake mould to shape it.

Tip

You can add different extracts into the dough. Almond, rose, and pandan extracts all work in this recipe.

You can add food coloring into the dough. Many recipes use a few drops of red or green food coloring to make pink and pale green mooncakes.
