So Simple Apricot Slice

Ingredients

  • 220 g Butter
  • 100 g sugar
  • 100 g apricot jam
  • 600 g SR flour

Recipe's preparation

  1. Melt butter on 60 degrees for 2 minutes on speed 2.

  2. Add remaining ingredients and mix for 20 seconds on speed 4, using spatula to assist.

  3. Press into a large baking dish and bake in oven at 180 degrees for 15-20 minutes.

  4. Cool in the tin. 

  5. When completely cool, cut into squares.

Tip

I have also made this with quince paste instead of apricot jam and it was just as delicious.
