Steamed Puddings

Ingredients

  • 150 grams SR flour
  • 150 grams sultanas
  • 1 teaspoon Mixed spice (ground)
  • pinch salt
  • 100 grams raw sugar
  • 250 grams Milk
  • 20 grams Butter

  • 1 teaspoon bicarb soda

Recipe's preparation

  1. Place a mixing bowl on top of the lid of the thermomix and measure out the dry ingredients ( you just want to use the scales function). Mix this together with a spoon and set aside. 

    In the thermomix bowl add the milk and butter. Heat at 80 degrees / speed 2 / 3 minutes. 

    Add the bi carb soda and mix speed 2 / 1 second. 

    Add the dry ingredients to the mixture and combine, speed 2 / 5 seconds. Scrape down the sides if necessary and repeat. 

    Lightly spray mini silicone cupcake tray/mould with oil. 

    Fill each hole 1/2 to 3/4 full  (as they will rise a bit).

    Clean/rinse bowl and add approximately 500ml water. 

    Place cupcake tray in the bottom varoma tray. 

    Place a sheet of alfoil over the top, suspending it over the edges of the varoma (making sure it doesnt touch the top of the cupcakes) and cover with the lid. 

    Cook at Varoma / Speed 4 / 20 minutes, or until skewer comes out clean when tested.

Tip

I used the tupperware mini cupcake mould but did fill them up to the top. They did overflow a bit but still kept their individual shape. 

These are lovely served with hot custard. 

Replace the sultanas with any sort of dried fruit (ie mixed fruit or chopped dates). 

Make sure that the alfoil is taught across the top of the Varoma dish so it doesn't touch the top of the rising puddings, this also stops the steam dripping down onto the puddings making them soggy. 

This was converted from my mums large steamed pudding recipe she does on the stove top. 

Freeze any leftovers for that last minute dessert treats (I haven't tried reheating in the thermomix only with the microwave).
