Sticky Coconut Rice with Mango

Sticky Rice

  • 500 grams white glutinous rice, wash and soak for 12-24 hrs
  • 1000 grams water
  • 1000 grams coconut cream
  • 80 grams palm sugar, grated
  • 1 pinch salt
  • 1 mango, diced or sliced

Recipe's preparation

    Steam the Rice
  1. Place water in Closed lid, and soaked rice in Varoma.

    Cook for 18 minutes, Varoma, Speed 1.

    Take off Varoma and discard water. Add coconut cream, palm sugar & salt toClosed lid. Place Varoma back on Closed lid and cook for 6 minutes, 80C, speed 1.

    Transfer rice to a large bowl and gradually add 3/4 of the coconut cream. Allow the rice to absorb the coconut cream before adding more.

    Reserve about 250ml of the coconut cream to drizzle over rice when serving.

    Divide rice into serving bowls, top with fresh mango & drizzle with reserved coconut cream.

Tip

You can adjust the amount of sugar & salt to your taste, the rice is not intended to be overly sweet as you rely on the fresh mango for sweetness.

Can be eaten hot or cold.

If fresh mangoes are unavailable, try it with banana.

    On the second steaming aren't you suppose to add water again i.e when you steam for a further 6 minutes. Thanks.
