Cake

  • 80 grams Butter, softened
  • 270 grams Dates pitted
  • 1/3 teaspoon Bi-carb soda
  • 230 grams water, boiling
  • 2 eggs, lightly beaten
  • 240 grams Self Raising Flour
  • 130 grams brown sugar

Caramel sauce

  • 180 grams brown sugar
  • 100 grams Butter
  • 185 grams thickened cream

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Sticky date cake with caramel sauce
  1. Preheat oven to 180 degrees and line a 20cm square cake tin with baking paper.

    Place dates, bi-carb soda and butter into TM bowl, add boiling water and leave soak for 5 minutes.

    Place flour and sugar into bowl with the date mixture and mix for 30 seconds on speed 4-5

    Pour mixture into the prepared cake tin and bake for 40 minutes or until cooked when tested with a skewer

    To make the sauce place cream, sugar and butter into bowl for 7mins/varoma/speed 2

    Serve cake with warm caramel sauce

    I noticed that the instructions omitted the eggs so I added these with the flour and sugar. 

    I then cooked in a muffin tray  (made 16) and cooked on 180 degrees for 15 minutes. 

    Served the individual muffins hot with the caramel sauce for an easy dessert.
