  • 1 litre Milk
  • 130 g arborio rice
  • 100 g raw sugar
  • 4 egg yolks
  • 1 pinch salt
  • 1 piece Lemon peel
  • 1 pinch cinnamon
  • 1 tsp Vanilla bean Paste, or a mixture of vanilla paste and vanilla extract

Recipe's preparation

  1. Grate lemon peel on speed 7-8.  
  2. Place all ingredients, except the sugar and egg yolks, into the bowl. Cook 45 mins,Counter-clockwise operation, 90º speed 1

  3. Add sugar and egg yolks and cook for a further 10 mins,Counter-clockwise operation, 90º speed 1

  4. Allow it to cool down in the fridge for a few hours. You can eat it warm but it will be a bit runnier. When ready to serve, sprinkle the top with cinnamon.

    Worked perfectly! I also added the scraped out seeds from one vanilla bean which gave it a gorgeous vanilla taste. Arborio rice works best.

    This recipe is awesome- I followed the directions - paid attention to where people commented and it is the ULTIMATE rice pudding, I actually have to stop making it cos I eat it all on the same day!

    I would not add more rice as I tried 180 grams listening to one of the other comments, it's great but doesn't need it the measurements are perfect.

    I used arborio rice ,turned the sugar into Castor sugar , make sure you mix the egg yolks in and use the butterfly too - sooooooo yummy thank you tmrc_emoticons.D

    Hello- just a small tip. If you use extremely fresh eggs- mine were only laid today from my backyard chooks- make sure you mix first with a fork. I added mine without doing this and you guessed it, I now have before me beautifully poached egg yolks in a very tasty rice mix, that is extremely runny. I will try again however as the flavour is very good.

    This is just delicious! Thanks for sharing. My rice was a little crunchy still but I think that has to do with the brand rather than the recipe. Fantastic flavour though. THanks for sharing
