Vanilla bean and Maple Syrup Ice Cream

500 g

  • 2 egg yolks
  • 250 grams cream
  • 250 grams Milk, I used skim (that was what I had)
  • 130 grams sugar, (I used raw sugar)
  • 20 grams Maple syrup, (Good quality)
  • 1 teaspoon Vanilla Bean Paste

Recipe's preparation

    Ice cream
  1. Place all ingredients into TM bowl  and cook for 5 minuts at 80deg C on Speed 4

    Place the mixture into a flat metal tray (stir in any optional ingredients prior to placing in tray).  Place into the freezer for approx 1-2 hrs or until firm but NOT frozen.

    Take the ice cream from the freezer, cut into medium sized pieces and place back into TM bowl.  Mix for 2seconds on speed 9, then for 10 seconds on speed 4 using the spatula to assist.  Place into airtight container and return to the freezer.

    This is delicious served with poached pears or on its own- very moreish!
