Vanilla Tapioca Custard (Dairy Free, Gluten Free, Soy Free, Corn Free)

Ingredients

700 g

  • 35 g tapioca seed/pearls
  • 80 g raw sugar
  • 2 eggs
  • 500 g coconut milk
  • 1/4 teaspoon Vanilla Essence or Paste

Recipe's preparation

    Method:
  1. 1. Place tapioca seeds into mixing bowl and mill

        1 minute/speed 9

     

    2. Add sugar and mill 10 sec/speed 9

     

    3. Add eggs, vanilla, and coconut milk and cook

        7min/90 degrees/speed 4

Tip

This is a good dessert for people not able to have dairy/gluten/corn and soy.

 

Tip for best flavor is to use home made coconut milk, or choose a store brand that contains more than 75% coconut extract in the ingredients.

    Hi Sarah, not quite sure on that one - banana could work but may make the texture different? I have heard of people making apple sauce and using that to naturally sweeten their custard, that may be an option?

    Any ideas for substituting the sugar? I have to elimate added sugar to my two kids diets, this would be perfect apart from the sugar. Add banana?

    Thank you so much for this recipe!!!  A new thermie owner and we can't tolerate cornflour due to the high glutamates.  I used tapioca starch and 1 can (400ml) of coconut milk so it was quite thick but it worked a treat and I will just reduce the tapioca a bit next time!  I also added some cocoa to make it chocolate.  Definitley going in my favourites for a gluten free, dairy free, corn free treat for my picky little boy!!
