Waffles with Maple Bacon

Waffles with Maple Bacon

  • 400 g Streaky Bacon
  • 2 tbsp Pure Maple Syrup
  • 2 eggs, Separated
  • 310 g full cream milk
  • 100 g unsalted butter
  • 1 tsp vanilla extract
  • 260 g self-raising flour
  • 35 g caster sugar

Recipe's preparation

    Maple Bacon
  1. Preheat oven to 190°C. Line a baking tray (30x40cm) with baking paper.
  2. Place bacon rashers in a single layer onto prepared tray and bake for 10 minutes on 190°C. Remove tray from oven and brush one side of bacon with syrup.
  3. Preheat grill. Grill bacon until crispy or as desired.
    Transfer into a thermal serving bowl or other large bowl and cover to keep warm.
  4. Waffle Batter
  5. Insert butterfly whisk. Add egg whites and whisk 2 min/speed 3.5.
    Put egg whites aside.

    Rinse and Dry Bowl.
  6. Add butter and melt 3 min/60°C/speed 1.
  7. Add milk, egg yolks and vanilla extract.
    Mix 5 sec/speed 5
  8. Add flour and sugar, mix 10 sec/ speed 5.

    Scrape pie down sides of bowl and repeat mix process.
  9. Add reserved egg whites and fold into batter with spatula.

    NOTE: You can can also use Thermomix on low speed setting until happy with consistency. I used speed 1 for about 10 minutes pausing to scrape sides occasionally.
  10. Pour batter directly into waffle iron as per directions on your waffle iron.
  11. Cooking Waffles
  12. Follow cooking directions on your waffle iron as each brand/model is different.
  13. Once cooked, plate and top with bacon.

    Top with extra maple maple syrup if desired.
