- 6 pieces Arnotts Triple Wafers, white ones only
- 3 kiwi fruits
- 340 grams white chocolate
- 90 grams cream, full fat
- desicated cocnut, for coating
8Recipe is created for
remove white wafers from a packet of Arnotts Triple Wafers and mill for 5 sec, speed 9. Set aside and rinse out bowl.
Remove pulp from 3 soft kiwi fruits and place in rinsed out bowl 5 sec, speed 8. Using spatula scrap kiwi fruit from bowl and add to reserved wafer mix and then stir through. This will help absorb moisture from kiwi fruit. Rinse and dry out bowl.
Place 340 grams white chocolate broken up or chocolate chips and 90 gram full fat cream into bowl 10 min, 50 degrees, spped 1.
Pour reserved kiwi fruit/ wafer mix into bowl 1 minute, speed 4 to combine.
Pour mixture into glass bowl and cover with plastic wrap (ensuring that plastic wrap touches mixture). Refridgerate for 4 hours or until mixture holds shape when scraped with a spoon.
Place desicated coconut onto a plate. Scrape white chocolate/kiwi fruit mixture using a teaspoon and then shape into small balls before rolling in desicated coconut. Refridgerate until ready to serve.
