Chargrilled Salmon with Maple Syrup Marinade & Sweet Potato Mash

Ingredients

Chargrilled Salmon with Maple Syrup Marinade

  • 2 cloves garlic
  • 150 grams Maple syrup
  • 1/4 teaspoon cayenne pepper
  • 20 grams tomato paste
  • 20 grams Dijon mustard
  • 1 Lemon Juiced
  • EVOO spray
  • 4 salmon fillets, fresh, 150-200 gms each, skinned and boned
  • 1 bunch Baby Rocket leaves

Sweet Potato Mash

  • 1000 grams sweet potato
  • 250 grams water
  • salt, to taste

Recipe's preparation

    Chargrilled Salmon with Maple Syrup Marinade
  1. Chop the garlic for 2-3 seconds on Speed 7.


    Add all other marinade ingredients (maple syrup, cayenne pepper, tomato paste, dijon mustard and lemon juice) and blend for 5 seconds on Speed 5.


    Pour into a large ceramic or glass dish, add the salmon, turn to coat, cover and refrigerate and allow to marinate for 4-6 hours.


    Spray a non stick frypan with some EVOO spray and put on a medium to high heat. Chargrill the drained salmon fillets for 30 seconds each side. Transfer to the Varoma tray(s) lined with baking paper and pour the remaining marinade over the top.

  2. Sweet Potato Mash
  3. Place sweet potatoes, water and salt into the TM bowl.


    Place the Varoma on top and cook for 15-20 minutes at Varoma temperature on Speed 1 depending on the thickness of the fillets.


    Remove Varoma tray and set aside.


    Make sure the sweet potatoes are well cooked before mashing.


    Insert Butterfly.Add 50-80grams of the salmon marinade to the sweet potato mixture and then mash for 20-30 seconds on Speed 3-4.


    Serve salmon on sweet potato mash with extra marinade spooned over and accompanied by baby rocket leaves.

    OMG! This was amazing.  Can't believe I waited this long the try it. I marinated the salmon overnight and added bok choy to the bottom varoma with 4 minute to go.  Cant believe how easly this all was to cook.

  • Really, really yummy! My mash

    Really, really yummy! My mash came out a little runny as I halved the recipe but didn't quite halve the amount of water. Ooops! Apart from that it was great. I used very thick king salmon which took 19 minutes to cook. I'll definitely be doing this one again!

    I didn't have time to marinade it so just made it up and cooked it and it was delicious and so easy to do, we didn't have sweet potatoes so I made a coconut rice (as I really like it) at same time the salmon was cooking and had julienne carrots and broccoli I with it just delicious  tmrc_emoticons.)

    Sensational!  The marinade is delicious and the sweet potato mash is the perect compliment.  The only addition I add is some dijon mustard to the mash, perfecto!

    Love nom nom nom...! I marinated the salmon overnight so it was full of flavour. Easy to throw it altogether and even converted my 11yo 'I can't stand fish; in fact I MUST be allergic to it' daughter {she's not btw}.

    This is in my favorites list for sure!

    Delicious!... Even though I overcooked the salmon, the yummy sauce compensated for this. I cooked the salmon for 15 mins, should have done 10 mins as my salmon fillets weren't that thick. I also only marinated the fish for an hour as I didn't have a lot of time, but it still tasted great!
