Crunchy Salmon Pie

Ingredients

Pastry

  • 90 grams Cheddar cheese, cubed
  • 160 grams plain flour
  • 60 grams Butter, cold and cubed (TM recipe)
  • 1/4 teaspoon paprika
  • 2 tbsp water

Filling

  • 60 grams Cheddar cheese, cubed
  • 3 eggs
  • 2 tbsp Sweet Chill Sauce
  • 40 grams mayonnaise, (TM recipe)
  • 150 grams light cream
  • 300 grams canned pink salmon
  • 130 grams Jasmine rice

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Pastry
  1. Place cheese in TM bowl and grate for 5 seconds on Speed 8.

  2. Add flour, butter and paprika and process for 15 seconds on

    Speed 6. 

    Add water only if dough is not moist enough

  3. Reserve 100 gms pastry

  4. Grease a 20cm pie dish.  Press remaining pastry into pie dish, base and sides.

  5. Refrigerate for 30 minutes

  6. Filling
  7. Place cheese in TM bowl and grate for 4 seconds on Speed 8.

  8. Add eggs, Sweet Chilli sauce, mayonnaise, cream and salmon and process for 15 seconds on Speed 3

     

  9. Heat oven to 180C

    Place the filling aside into a bowl.

    Clean TM bowl.

    Put rice into basket and rinse. Put 900gm water into TM bowl and put basket with rice in.  Put lid on thermomix. Cook at Varoma for 15 minutes at Speed 4.This step could be done before preparing your filling

     

  10. Stir the rice into the Filling mixture and place on top of pastry in the pie dish.

    Sprinkle the pastry that was put aside on top of the filling.

  11. Cook for 40 minutes in 180C oven.

  12. Serve alone or with a salad
