Apricot chicken (risotto style)

Ingredients

6 portion(s)

  • 2 sprig Thyme, Fresh
  • 2 sprig parsley, Fresh flat leaf
  • 2 clove garlic
  • 1 cube ginger, Peeled
  • 1/2 --- onion, Brown halved
  • 40 gram olive oil
  • 100 gram carrot, Chopped roughly
  • 120 gram Red Capscium, Descended, chopped
  • 400 gram chicken breast, cubed, 3cm cubes
  • 480 gram Tinned apricot nectar
  • 390 gram water
  • 1 tablespoon chicken stock
  • 300 gram arborio rice
  • 50 gram frozen peas & corn
  • sea salt flakes, To taste
  • ground black pepper

Recipe's preparation

  1. Add thyme, parsley, garlic, ginger, onion in mixing bowl.

    chop 3sec/ Speed 7

    Add oil, sauté 3min/ Varoma/Speed 1

    Add carrot, capsicum 

    Chop 3sec/Speed 7

    Scrape sides

    insert butterfly

    add chicken, apricot nectar, water, stock,rice

    Cook 17min/100 C/Counter-clockwise operationspeed 1

    Remove butterfly

    Add peas

    Cook 4min/ 100 C/ Counter-clockwise operation/ speed 1

    Pour into thermos server, season, rest 3-5min

    I love this recipe. Great for the family. I always use chicken thigh and increase the quantity of vegetable. Also increase the quantity of thyme. It's a regular weekly meal at our house

    Made this for my 9 month old as a dinner and the whole family ended up eating it too... it was lovely... did cook 8 mins longer to thicken as it was very runny but other than that it was divine

    I loved this recipe! My fussy eaters (2 & 4) devoured it. To add more flavour I doubled the amounts of Onion, Parsley, Thyme and Ginger and used Chicken Broth instead of stock and water. Also used Chicken thigh instead of Breast and it was amazing! Have made this 4-5 times now and found that this gives the most flavour to the recipe. Thank you, love it! tmrc_emoticons.)

    Great recipe just cooked it 5 minutes longer as the specified amount of time was not enough. I have made this before and my husband always requests it.

    I made this one and the risotto didn't cook. I tried again adding risotto after putting the carrot and capsicum in and it was better but needs longer to cook
