Babotie and yellow rice

Ingredients

Mince Component

  • 3 slices bread, wholegrain
  • 1 bunch coriander leaves
  • 1 tbsp cumin, ground
  • 1 tbsp turmeric, ground
  • 1 tbsp curry powder, mild
  • 2 cloves garlic, peeled
  • 200 grams Onion, Peeled & quartered, about 1 large onion
  • 2 centimetre ginger root, peeled
  • 50 grams olive oil
  • 30 g Apricot Chutney, or apricot jam
  • Salt and pepper, to taste
  • 750 g Beef mince, lean
  • 30 g Lemon Juice
  • 40 g tomato paste
  • 50 g sultanas, or raisins
  • 50 g Milk

Savoury Custard Topping

  • 3 Eggs, Large, at room temperature
  • 250 g Milk
  • Salt and pepper, to taste

Yellow Rice

  • 1/4 cup long grain rice, per person
  • 1 litre water
  • 1 tbsp TM31 Veg. stock concentrate
  • 1 heaped teaspoon turmeric, ground

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Mince Component
  1. Add to the bowl the bread, corriander, cumin, turmeric, and curry powder. Put lid and MC in place. Combine 3sec/sp9. Set aside in thermoserver. Dust out bowl.

    Add garlic, ginger, and onion to the bowl. Put lid and MC in place. Chop 3sec/sp5. Remove the MC. Saute 3min/120°/sp1.

    Add olive oil, chutney, salt and pepper, and mince. Put the lid in place. Saute 3min/120°/Counter-clockwise operation/sp1.5 - rice basket on top.

    Transfer the mix into the rice basket, place water in bowl, about 1 litre. Put lid in place, and cook 10min/100°/sp3.

    Transfer the mince mix into the thermoserver, and mix through well with the breadcrumb mix. 

    Place this mix into a heatproof dish that fits into your thermoserver. Thoroughly wash the bowl.

    Using a small madon jar lid or something similar as a spacer, place your dish on top of this in your varoma dish. Cover with a piece of baking paper just larger than the heatproof dish, and cover with the varoma lid.

  3. Place eggs, milk, salt and pepper into the bowl. Blend 5sec/sp5.

    Pour on top of the mince.

  4. Varoma time!
  5. Place 1.5litres of water and the veg. stock paste in the bowl. Lid in place. Varoma securely on top. 40min/varoma/sp2.5

    In the meantime, rinse the rice and mix in the turmeric. Place it in the rice basket and set aside.

    After 40 minutes remove the varoma, open the lid, place the rice basket in, adding more water if needed. Replace lid without MC. Steam 20min/varoma/sp3. Remove the heatproof dish from the varoma and place in the oven, 180° grill, until golden brown. This should take about 15-20 minutes. 

     

    To serve, form a bed of rice, place the meat on top, and serve with apricot chutney. 

    For individual portions, put the rice in the bottom of a ramekin, then the mince, then the savoury custard. Steam this in the varoma for 40 minutes, the grill for 20minutes, or until golden brown. Place the whole ramekin on a plate, and serve with apricot chutney.
