Beef Balsamic and Tomato Stew
- 1 large onion, quartered
- 1 clove garlic
- 4 rashers of middle bacon, trimmed
- 30 g olive oil
- 800 g Stewing, chuck or blade steak
- 2 medium carrots peeled and chopped
- 2 sprigs fresh thyme
- 40 g balsamic vinegar
- 400 g tin diced tomatoes
- 1 tablespoon vegetable stock concentrate
- 200 g water
- 50 g plain flour
- salt and pepper to taste

Recipe's preparation
Place onion, garlic and bacon in TM bowl and chop for 3 seconds on speed 7
Scrape down the sides of the bowl and add oil and cook for 3 minutes, 100 degrees, speed 1
Add beef and cook for 5 minutes, varoma temperature, reverse, speed soft
Add carrots, thyme, balsamic vinegar, tinned tomatoes, stock concentrate, water, flour and seasoning.
Cook for 40 – 60 minutes, 100 degrees, reverse, speed soft

Tip
Cooking time for meat may vary depending on the cut of meat used. I cooked mine for the full 60 minutes to ensure the meat was nice and tender.
Delicious served with mashed potato. Place in your Thermo server while you cook your potato

Yum! I slightly changed this. I only used 2 rashers bacon and ~500g beef as I felt that there was too much meat for only 4 serves. I also added 200gr mushrooms (could of added more) in the last 15 mintues of cooking to make up the bulk of using less beef. Turned out really well. Served with brown rice and steamed greens.

I have not frozen it but there is no reason why it shouldn't. Sometimes dishes such as this do develop flavours well on serving as left overs so freezing could create a similar result. you could always get your partner onto the delights of cooking with the Thermomix and how he could make it fresh with eass. Good luck with the rest of your pregnancy

Wonderful and very filling! I didn't have any bacon so I used up the 100% pork sausages from my freezer. And didn't have potatoes, so served it up on toast. Perfect for a laid back Sunday night meal. Thanks for sharing

This dish was amazing - loved by the whole family. I didn't add any water and used 25g of arrowroot flour instead of the plain flour. I cooked for the full 60 minutes and used stewing steak. Meat was lovely and tender. We will be making this again.

OMG YUMMY! This was delish. The meat was so tender. I didn't use a full tin of tomatoes and I added corn flour to thicken it more as even reducing water by 80mls it was runny but that's a personal choice we just like thick stews. Will be making this again and adding more veggies. Thanks for such a wonderful hearty meal.
