Carbonara Chicken FIlo Parcels

  • 2 fillets chicken breast, Butterflied in halves
  • 40 grams Parmesan cheese, Cubed
  • 1 --- medium red Onion, Cut in half
  • 2-3 cloves garlic
  • 3 bacon rashers
  • 6 button mushrooms
  • 30 grams Butter
  • 200 grams cream
  • 1 heaped tablespoons stock paste
  • 1 heaped tsp dried italian herbs
  • to taste cracked black pepper
  • 1 heaped tsp cornflour (starch)
  • 12 sheets Filo Pastry
  • Extra melted butter
  • sesame seeds

Recipe's preparation

    Carbonara Sauce
  1. Place Parmesan cheese in to bowl and grate 10 secs/speed 10, remove from the bowl and place aside.

    Place Red onion and garlic cloves in to bowl and chop 3secs/speed 7, add roughly chopped bacon rashers and button mushrooms and chop 3 secs/speed 5.
    Add 30g butter and sauté 4mins/Varoma temp Counter-clockwise operation/Speed 1.
    Weigh in to bowl cream, add stock paste,Italian herbs, pepper and add cornflour mixed to a paste with water.
    Cook 5mins/ 100 deg.

    Cool in fridge for 30mins

  3. Preheat your oven to 180 deg and line a baking tray with baking paper.

    Place one sheet of filo pastry on a clean dry bench, brush pastry with melted butter and place another sheet of filo on top, repeat to make 3 layers, place your halved chicken breast at the narrow end of the pastry, top with a quarter of your carbonara sauce, sprinkle with Parmesan.

    Fold the end over the chicken filling, fold in the sides and roll up to form your parcel. Repeat with remaining pastry and chicken to make 4 parcels.

    'Brush parcels with melted butter, sprinkle with seasame seeds and bake for 30 mins or until crisp and golden brown.

    'Serve immediately
