Ingredients

Chicken and Vegetable Pie
  • 1 onion
  • 2 carrots
  • 1 zucchini
  • 50 g olive oil
  • frozen peas
  • frozen corn
  • 500 g chicken breast, cubed
  • 250 g water
  • 1 Tbs TM vegetable stock concentrate
  • 125 g cream
  • 3 Tbs cornflour

Recipe's preparation

  1. Place onion, carrots and zucchini into TM bowl.  Chop on speed 5 for 4 seconds. Add oil and cook on 100 degrees, speed 1, for 4 minutes. Add remaining ingredients.  Cook on Varoma temp, speed 1 for 20 minutes.   If sauce is too runny, add a little extra cornflour and cook on Varoma temp, speed 1 for another couple of minutes to thicken. Place pie filling into puff pastry lined pie dish.  Cover with another sheet of puff pastry and bake in 200 degree celsius oven for 20 minutes or until pastry has puffed and is browned.

Tip

Nothing goes down better than a hot pie on a cold night.  This mixture makes a lot - if there is too much filling for you, pop it in the freezer and take it out for another time.  Or make individual pies and freeze the ones you don't eat.  I didn't write down exact quantities, but anything goes with a pie...you can follow the basic method for any fillings really.  You might want to alter the amount of water/cream you add at the end depending on how much sauce you want your pie to have.

    Yum - made this tonight and omitted water and instead added 180ml zymil cream for lactose free son, 5 tblspns cornflour, handful diced sweet potato and 2 rashers bacon to the other ingredients. I made them as 6 individual pies in ramekins (to feed 6 adults) and did a puff pastry top and they looked and tasted delicious.

    Was very nice. I made a few changes. Added mushrooms and i small diced potato. 

    Also.. how much frozen peas and corn?? Recipe doesnt state. I used 1 cup frozen pea/corn mix. 

    Used about 200g cream and 40ml water and 4 tbs cornflour. Still a bit runny. But i made 1 big family pie and had enough to make 4 normal size pies in raminkins/pie dishes. Will definetly make again as can feed an army

    Delicious and complete hit with the entire including my 9yr old son who usuallt needs to be persuaded to eat vegetables ... he devoured it! I used more cream and no water and added mushrooms ... perfect consistency. Thank you for the share ... will def be one of our regulars!

    I used left over roast vegetables. Put into a pie dish lined with pastry then cooked other ingredients (no water) and added on top. Need to cook on reverse next time as the chicken turned to mush, but tasted great!

    Delicious! Addd less cream and added cauliflower too and hubby and kids couldn't tell. Baby son 10mths just ate pie filling, 3 year old daughter devoured her portion. Will become a regular meal at our house now!

    After reading some of the reviews I added mushrooms, 180mls of cream, added extra cornflour, Dijon mustard and used a few different vegies. I had enough mixture for a family size pie and I gave my toddler some filling for dinner. 

    I will definitely make this again.

    Yum. Beautiful tasting pie. I made a few changes as per other reviewers. Added mushrooms, garlic cloves & some curry powder. left out the water. cooked for only 12mins in Thermomix before placing in pie base for the oven. Cooked for 40mins on 180c so pie was nice & brown. Will def make again.

    needs to have the cornflower premixed with the water, before adding it to the bowl. Otherwise, you can end up with unpalatable cornflower chunks throughout the mix.

    Made this into pies with my sunbeam pie maker. It made 8 normal size pies. I didn't add water but instead added 150g cream and a little extra cornflour to thicken it up. Also used frozen shortcrust for the base and puff for the top. Pie maker made them perfect.

    I followed instructions but listened to others and reduced water by 100ml and used 5 tablespoons cornflour. 

    Filling tastes nice but I am giving away so can't judge overall taste. Certainly looks great.

    Made this for dinner tonight. It was a hit with all of the family. I chopped up the left over filling that wouldn't fit in the pie case and gave it to our 6 month old for dinner. She loved it too. Winner in our house so will be making this again for sure.

    Really yummy! Made this last night, left out the water and used 150g cream as per other comments and it was fantastic. We also popped it in the oven for 5-10 mins without the filling to crisp up the pastry, which was great. Added in some spinach and brushed the top of the pastry with egg. Will definetly be making this again!

    Oh wow. This is just amazing! I added 2 tablespoons of curry powder, 2 teaspoons of garlic powder, one leek  and an extra tablespoon of vege stock and we were in curry pie heaven. Yummo!!!!

    My family absolutely love this pie. My 6 year old, who says he doesn't like chicken, keeps asking me to make it! The only problem I have is that everytime I make it the bottom of the bowl burns. Does this happen to anyone else?

    Pies don't get any better than this! I add heaps of veges- sweet potato, pumpkin, celery and mushrooms. I also add curry powder and tumeric, and usually subsitute cream for coconut cream. I only add 50ml of water which is plenty and usually needs extra thickening. Also good with mash potato or rice if you don't have time to make into a pie.

    This makes a lovely pie, I added some chopped bacon for added flavour and left out the water, using 150g of cream instead. I also added some mushrooms. This will definitley be on high rotation this coming winter

    Fantastic recipe! Made a couple of adjustments: used shortcrust pastry for the base which I blind baked, used chicken thigh as that's what I had, omitted the water per previous comments, threw in some thyme, and added some wholegrain mustard (though I'm not sure it needed it, will try without next time). Husband LOVED it. Thank you!

    Very yummy and easy. I made the pie using the quick puff pastry recipe from bcb and it was just delicious. There was some leftover pie filling which is perfect to add to pasta for my toddler. After reading  some previous comments I added a few slices of  shortcut bacon with the onion and a handful of chopped fresh herbs. I increased the cream to 150g and didnt add any water.

    Wow. Wow. Just loved this.  Great recipe advice to add what you like, which I did.  Also reduced water.  Used some left over yoghurt/dill/garlic sauce instead of cream.  Amazing.

    My thawed puff pastry was a bit chewy.  Would blind baking help? Any advice greatly appreciated as this is a winner.

    I made these for dinner tonight. Used coconut milk, omitted the water, added some mushrooms and seeded mustard. I made them into small pies using a muffin tray. They were full of flavor, a huge hit in our family. We will definately having these again.

    Thank you so much.  i subbed coconut cream for the normal cream and didn't have enough chicken so used left over pork chops.  It was amazing and the first chicken pie I have ever made but definitely not the last!!!
