Risotto
- 50 g Parmesan cheese, - cut into small blocks
- 1 onion, - cut in quarters
- 2 clove garlic
- 1 Large Handful of Parsley
- 2 bacon rashers, - cut into strips
- 20 g olive oil
- 300 g chicken thigh fillet, - cut into 2cm cubes
- 320 g Aborio Rice
- 3 tablespoon veggie stock concentrate
- 700 g water, - or as much as it takes to "fill" to the bowls maximum line
- 2 handfuls of baby spinach

Recipe's preparation
Place parmesan cheese into the TM bowl and chop for 8 seconds on sp 8, set aside and wash bowl.
Place onion, garlic & parsley to the TM bowl, chop 5 sec, sp7
Add bacon & oil and saute for 5 mins, Varoma Temp, "Counter-clockwise operation" , sp 1
Add chicken & rice and saute 5 mins, 100degrees, "Counter-clockwise operation" , sp 1
Give contents of the bowl a stir and add water and stock and cook for 16mins, 100 degrees, "Counter-clockwise operation" , sp 1.5 with basket on top of TM bowl and MC removed
Once finished pour over baby spinach in a Thermoserver and allow to rest for approx 5mins
Stir through Parmesan cheese"Closed lid"

Unpleasant texture. Although the risotto was flavor some the texture was like a purée with the chicken no longer in pieces but entirely shredded (reverse blade was used). The method needs tweaking before I would use again unfortunately.

Admittingly, there is a lot of flavour. However, the texture was like baby food. Very mushy. The chicken was basically reduced to shred, almost non existent. I ended up having to add some corn at thermo saver stage to add a different texture.

I made this the other night and it came out looking like a gloopy porridge mess :\ not my favourite experience with Risotto as many of the other recipes have turned out great.
Tasted better the next day than it did the night I made it, probably wouldn't make it again from this recipe though, sorry.

This was a quick and easy risotto. I added slightly more chicken and also some roast pumpkin pieces that I had sitting in the fridge. I also added 1 less tsp of stock paste.

Easier and quicker to cook than ordering takeaway! Minimal effort for maximum flavour. I keep a chicken fillet and bacon in the freezer and silverbeet in garden so I can make this for a last minute dinner. I halve the amount of stock

I have made this several times now and my family all enjoy it. I have a Bellini and the only tweek I need to make is to add more water (around 800g otherwise it's too gluggy). Thanks for the great recipe

I made this for dinner tonight, my first rissotto so we were pleased with it and will make it again. I can't have to much salt so I used 1 1/2 Massel Ultra Vegetable Stock cubes.

Easy to make.. made it for lunch today, i cut back on the stock as everyone else suggested , but maybe i did too much as i used stock powder not concentrate, i found it tasty, but too gluggy, would love to know how to make it without the porridge texture, in the pan on the stove mine doesnt go gluggy like that..

Hi Cocorilla How much salt do you use in your veggie stock paste? I use approx 80g so if you're using the full 150g that would be why your's tasted so salty! Hope you still enjoyed the dish

My husband and 7 year old cooked this for our dinner but I told him to double the chicken and bacon. Was DELICIOUS! Everyone went back for seconds. This will definitely be on our menu again. Next time I will substitute 200mls of wine instead of water for a difference. yummo!!!

YUM! I made this last night and it was a big hit!I had run out of my thermomix made stock paste so just used 700ml of a Campbells Real Stock liquid container I had in the cupboard Was still very good!! Probably less salty than it usually would be, so I just seasoned at the end
