Chicken Cacciatore (low fat, HCG-friendly)

Ingredients

6 portion(s)

  • 1 medium onion, Peeled and quartered
  • 2 cloves garlic
  • some Fresh Herbs e.g. basil and parsley
  • 2 chicken breasts, (approximately 600g)
  • 1 can crushed tomatoes
  • 1 tablespoon TM vegetable stock concentrate
  • Large handful Baby Spinach Leaves
  • salt and pepper to taste

Recipe's preparation

  1. Put the onion, garlic, basil and parsley into the mixing bowl and chop for 5 seconds, speed 7.


     


     

  2. Add about 1/2 MC of water and the vegetable stock, saute 2 minutes, 100 degrees, speed 1


     

  3. Add chopped chicken breast and saute for 4 minutes, 100 degrees, REVERSE, speed soft.

  4. Add tomatoes, salt and pepper and cook for 30 minutes, 100 degrees, reverse, speed soft.  (after 20 minutes, add the spinach)

  5. Serve with cauliflower rice, zucchini 'noodles', steamed asparagus or broccoli.

    Yummy thank you! I needed to cook some chicken before it was out of date and only a few days in phase 2 of HCG I am exhausted and really couldn’t think or be bothered! This recipe was super easy, tasty and will make again!

    Best HCG recipe ever!!!

    split it into my 6 portions, froze some, refrigerated others and have enjoyed a serve (at least) every day for the last 3 days with zucchini noodles stirred through.

    DELICIOUS!! Will be making this again for sure! Meals like this make HCG a breeze
