Chicken Cashew

Ingredients

500 g

  • 500 grams chicken thigh
  • 3 cloves garlic
  • 2cm --- ginger
  • 2 --- Chillis, Seeds removed
  • 1 --- onion, Cut into quarters
  • 1 --- carrot, Julienned
  • 1/2 --- Cashews, 1/2 cup roasted
  • 2 tablespoon fish sauce
  • 2 tablespoon oyster sauce
  • 2 tablespoon soy sauce
  • 1 tablespoon white wine
  • 1 tablespoon brown sugar
  • 1 teaspoon cornflour
  • 1 tablespoon water
  • 350 g white rice, Use boiled white rice recipe

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Chicken Cashew
  1. Add garlic, ginger and chilli to TM bowl and chop 5 seconds speed 7, scrape down sides and chop again until fine.

    Scrape out and add to sliced chicken thigh fillet in a bowl, set aside.

    Add soy, oyster, fish, cooking wine and brown sugar, water and cornflour to bowl and cook 6 minutes 100 degrees speed 3.

    Add a splash of vegetable oil to a hot wok and stirfry chicken, garlic, chilli and ginger.

    Remove and set aside in TM thermoserver. When sauce complete and thickened add to chicken in thermoserver.

    Clean TM and add rice and cook.

    Half way through rice cooking, add splash more oil to hot wok and stirfry vegies. When ready add chicken with sauce and cashew nuts to combine

    Serve with steamed rice and coriander and a sprinkle of extra cashews!
