Chicken Casserole
- 500 g Chicken pieces (thighs or chops with bone), 4-6 pieces or 500-600g
- 50 g Olive Oil.
- 1 brown onion
- 3-4 cloves garlic
- 1 heaped teaspoon oregano fresh or dried
- 1 bay leaf fresh or dried
- 100 g white wine
- 1 zucchini sliced
- 1 potato cubed medium sized
- 1 carrot sliced
- 1 celery stick, sliced
- 1 heaped tablespoon vegetable/Chicken stock concentrate, (made in the TM)
- 200 g water, as required 200-400g
- 50-60 g Cornflour seasoned, season with sea salt and 1tsp dried hearbs/herb salt to coat chicken
- freshly ground black pepper & sea salt, to taste
- Parsely chopped

Recipe's preparation
1. Chop onions and garlic 3 Seconds, Speed 7
2. Add Oil and Cook 3 mins, 100deg, Speed 1
3. Coat Chicken in cornflour and herb salt mixture
4. Add Chicken, sliced vegies, stock, herbs,bay leaf, white wine, and water to cover (within 2ltr limit) Cook 20mins, 100deg,"Counter-clockwise operation" Speed 1
5. Season to taste sprinkle with chopped parsley. Serve with rice or mash.

Tip
If you would prefer vegies finely chopped then add vegies roughly chopped to TM bowl after step 2 and chop for 3-4 seconds, speed 5 then proceed with step 3.
You may wish to brown coated chicken in a pan prior to adding to TM bowl in step 4.

This was really good, so tasty.... Very similar to one I cooked on the stove and then in the oven in my cast iron pot. I used diced chicken so next time I would cook the vegetables for 10 minutes and then add the chicken for the last 10 minutes... Will definately cook again.

This is so quick and easy. I only had 300 g of chicken but I added mushrooms, parsnip and extra carrot. The bowl was pretty full but handled it ok. I only used 100g of water as I am now using this as a pie filler so I wanted it fairly thick. Tastes delish.
