Ingredients
- 500 grams chicken breast or thighs, roughly chopped
- 1 onion, peeled and halved
- 1 bunch parsley, washed
- 2 cloves garlic
- 1 tablespoon plain flour
- 1 egg
- 2 tablespoons mayonnaise
- 2 teaspoons chicken or vegetable stock
- S & P to taste
- 1/4 cup extra flour for coating
- 2 tablespoons Oil for frying
Recipe's preparation
1. Place chicken, onion, parsley, garlic and flour into the "Closed lid" and blitz sp 4.5 until ground to your preference..around 15-20 seconds.
2. Add egg, mayonnaise and S & P, and blend sp4/"Counter-clockwise operation" 10 secs. Mixture will be soft.
3. Roll mixture into pattie shapes and then roll in extra flour. Mixture can be used now or put in the fridge for later.
4. Fry in a hot pan with oil for about 5-8 minutes each side, until folden brown and cooked when tested.
5. Drain on paper towels.

Tip
Quick and easy...
This is quite a soft mixture when shaping. Add extra flour if it's not able to hold a pattie shape when forming.
Serve with a jacket potato, and a crisp side salad.

Great Recipe!
I increased chicken to 650g and the mixture wasnt at all sloppy. I also added some diced bacon, mushroom and cheese. Kids loved, adults loved it.. winner all around!
Next time will try adding some spinach and fetta or even some satay sauce and crushed peanuts!

Thanks for a great recipe. I added a small tin of corn at the last step. My 10yrOld said they tasted like KFC pop corn chicken! You forgot to write the stock into the method so I just added it with the mayo etc. all good.

Delicious, so light and tasty. You MUST have them with lemon AND mayo! I found it easier dipping the fritter into the flour and then popping straight into the frying pan, rather than coating all the fritters in flour first. I also doubled the recipe. Will be making again. Yum.

I learn't at a cooking school
I learn't at a cooking school in Thailand to wet your hands first when rolling chicken mixture like this that is very sloppy. Maybe this little trick will help for next time you make these. I did that last night when I made this recipe and it worked a treat.

Really nice recipe, the mixture was very wet, which made them difficult to roll, but they were lovely and moist to eat, not dry like minced chicken tends to be. Will definitely make again!
