Chicken Shawarma
- 1000 grams skinless chicken thigh fillets
- 2 cloves garlic
- 5 sprig coriander
- 1 level tbsp ground cumin
- 1 level tbsp ground cardamom
- 1 level tsp cayenne pepper

- 2 level tsp salt

If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation
- Dice chicken into 2cm by 2cm pieces
- Set chicken aside
- Place garlic and corriander in TM bowl and chop on speed 5 for 5 seconds
- Scrape down bowl and repeat
- Add all remaining ingredients into TM bowl and mix on speed 2 for 10 seconds
- Add diced chicken, "Gentle stir setting" stir for 30 seconds
- Repeat until chicken is covered in marinade
- Heat fry pan to medium to high
- Add chicken and cook until ready

Tip
Fresh corriander can be replaced by 1 tbsp of ground corriander
Serve with tomato and onion salad, in a wrap or with rice.
Chicken can be replaced with lamb

I added a 2 cm piece of ginger and 2 tsp of garam masala to the mixture then grilled the chicken to give a crispy finish, served on a bed of salad and topped off with garlic mayonaisse. Perfect!
