Chinese Stirfry - Chicken in Oyster Sauce

Ingredients

Stirfry

  • 1 clove garlic
  • 1 --- onion
  • 30 grams canola oil
  • 800 grams diced chicken thighs
  • 10 shakes of chilli flakes
  • 1 tablespoon dried basil
  • 2 tablespoons oyster sauce
  • 2 tablespoons kepas manus (sweet soy sauce)
  • 1 tablespoon soy sauce
  • 2-3 medium carrots sliced lengthways, then cut into semi-circles
  • 100 grams water
  • 1/2 --- cup cold water
  • 3 teaspoons cornflour

Recipe's preparation

    Method
  1. In a seperate small bowl, add half cup cold water and mix with 3 teaspoons of cornflour. Set aside.
  2. Add onion, garlic and chilli flakes, chop on speed 5 for 3 seconds.
  3. Add oil, saute for 4 minutes at 100 degrees on reverse, spoon speed. Scrape down sides of bowl with spatula.
  4. Add chicken and all remaining ingredients (except cornflour mixture) and cook for 15 minutes at 100 degrees on reverse, spoon speed.
  5. Add cornflour and water mix, mix through with spatula then continue to cook for 5 minutes at 100oC on reverse, spoon speed.
  6. Serve with steamed rice or vegetables, or both!

    Made this tonight and was very disappointed. had all the ingredients so didn't need to sub anything. Chicken didn't shred or anything. it just tasted kinda like chicken with too much soy sauce... and I love soy sauce.

    Hi there,

    I used to always end up with shredded meat in recipes....usually not looking anything like the pictures. For this recipee I added the butterfly before putting the chicken and veg in. Worked a treat. Hope this helps tmrc_emoticons.)

    Delicious! My family loved it, it was like a dish that we used to buy when we bought Chinese Takeaway! But since owning the Thermomix, we don't do that anymore! We can make it ourselves and have left overs for other  lazy no cook nights!

    Beautiful & best of all enjoyed by 8 & 11 year olds and hubby.  I did use beef strips and cooked for an extra 5 minutes and added extra vegies, some coriander instead of the basil and some ginger.  I didn't have kepas manis so used soy sauce and some honey.  Served with slendier noodles. Thanks for a great recipe.  Looking forward to trying it with chicken.

    Have just made this for dinner tonight - didnt measure out all the sauces etc but worked out fine. Used chicken breast not thighs.  Had no normal soy sauce so just used extra sweet soy sauce. Didnt use as much chilli flakes but will omit this from the next batch I cooked as it had to much of a "bite" to it for my young children. Over all this is a winner in my eyes & even my sister took some home for dinner!!
