Corned Beef Fritters

  • 10 slices corned beef, Leftover
  • 2 onions
  • 250 grams corn kernals, Fresh or Frozen
  • 200 grams water
  • 380 g Self Raising Flour
  • 10 grams Himalayan salt
  • 4 eggs
  • 2 cloves garlic
  • 4 sprigs Parsely, Leaves only
  • 8 stalks fresh chives, Roughly broken up
  • 3 tablespoons coconut oil

Recipe's preparation

  1. Set speed to 7 for 10 sec and drop Parsley and chives onto spinning blades in mixing bowl. Set aside in spare bowl.

    Cut corned beef into chunks and place in mixing bowl.

    Hit turbo button for one second intervals until beef is finely chopped but not minced, Scraping sides as needed.

    Remove from mixing bowl and set aside in spare bowl with herbs. (If any large chunks are left return them to mixing bowl and chop again.)

    Peel onion and cut in quarters, and place in mixing bowl with peeled garlic. 

    Chop on speed 7 for 3 seconds. Scrape down and repeat if needed. Add to corned beef and herbs in bowl.

    Add corn to bowl with beef mixture and stir.

    Place water in TM bowl and heat on 37 degrees for 1 minute, speed 1. 

    Add flour, salt, egg and oil, and blend on speed 7 for 20 seconds until smooth.  If too thick, add a dash of milk and mix again.  It should be thick but not as thick as cake batter.

    Pour batter over meat mixture and stir together.

    Heat some coconut oil in a frypan and place large spoonfuls of the batter into the pan.  Cook until bubbles form on top, then turn and cook the other side.  Set aside in a warm oven on a plate lined with paper towel and cook remaining batter.

    Serve with leftover bechemal sauce, barbecue sauce or Tomato Relish.

    Made this tonight. Thanks for the recipe. 

    I used milk instead of water as our family traditional recipe uses milk. They were wonderful. 

    I also set some shredded meat aside and made dairy and egg free mini fritters for my toddler who has food allergies. I used her formula and water, a little flour and a splash of oil. She enjoyed eating what we were eating.
