  • 1500 grams water, hot
  • 1-2 teaspoons thermomix vege stock concentrate
  • a few cloves or bay leaves
  • 1 tablespoon honey
  • 1 tablespoon vinegar, (apple cider or balsamic)
  • 1000-1500 grams corned beef silverside, washed
  • mixed vege of your choice
  • 1 handful of parsley, (sauce)
  • 50 grams Butter, (sauce)
  • 40 grams plain flour, (sauce)
  • 350 grams leftover strained cooking liquid, (sauce)
  • 100 grams cream, (sauce)
  • 1 tablespoon mustard, dijon or wholegrain, (sauce)

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Instructions
  1. Add parsley to bowl & chop 3 seconds, speed 7. Scrape down & repeat. Set aside in a bowl.
  2. Place water, vege stock, cloves/bay leaves, honey & vinegar in bowl. Insert Varoma & place cornmeat inside. Cook 90 minutes, Varoma, speed 2.5.
  3. Add potatoes to your simmering basket & insert into the bowl. Cook 15 minutes, Varoma, speed 2.5.
  4. Add mixed vegetables around cornmeat & cook for another 15 minutes, Varoma, speed 2.5 (or until cooked to your liking).
  5. Set Varoma & Simmering Basket aside. Strain your cooking liquid & set aside.
  6. Add butter & flour to your bowl. Cook 5 minutes, 100°, speed 2.
  7. Add 350g reserved cooking liquid, cream, mustard & parsley to bowl. Cook 8 minutes, 100°, speed 4.

Tip

This recipe makes 2 cups of sauce, the leftovers freeze well. You can use it as a base for a pasta bake, on leftover veggies, you name it!

    Sam - did you work out how to adjust the recipe? I too found the meat dry after the full time. I also found the veggies very soft.

    Turned out absolutely perfect. The meat was so tender...it melted in the mouth. I changed the cream to coconut cream for my dairy intolerant household and it was fabulous. I had been too scared to do it in the thermy before this but this is the only way i will cook it from now on. Cant wait to try it with pickled pork.

    Sauce was really lovely but I found meat very dry compared to our normal stovetop or slow cooker method. I will follow this sauce method from now on though.

    This is by far the best recipe for silverside! So easy, and the vegies were beautiful and the meat was so juicy and moist!! This was a huge hit in our house, thank you Thermomumma!!!

    OMG!  This is a wonderful recipe.  Absolutely eveything was fantastic.  I did adjust the mustard to 1/2 Tablespoons of Dijon and 1/2 Tablespoons of Wholegrain mustard.  This will now be a regular meal in this household.  Thankyou.

    The meat turned out really juicy, even better than doing the corned beef in the slow cooker. Sauce was rich but VERY tasty. Loved how easy the potato and vegies were to cook at the same time.
