Edmonds Corned Beef

Ingredients

Corned Beef

  • 1 leaf bay leaf
  • 1 sprig parsley
  • 4 --- black peppercorns
  • 1 heaped tablespoon golden syrup
  • 1 thinly sliced strip of orange
  • 1 level tablespoon DYC Malt Vinegar
  • 1 Kg Corned beef
  • 1.5 litres water

Mustard Sauce

  • 1 egg
  • 2 level tablespoon sugar
  • 1 level tablespoon Champion standard flour
  • 2 level tablespoons dry mustard
  • 1 --- cup of corned beef cooking liquid
  • 1/4 --- cup DYC malt vinegar

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Cooking Corned Silverside
  1. Add bay leaf, parsley, peppercorns, golden syrup, orange, malt vinegar and water to the Closed lid.

     

     

  2. Spray the Varoma dish with oil (this will ensure the meat does not stick).

    Remove the meat from the packaging and rinse well under cold water. Dry it with paper towels and place it into the Varoma dish.

     

     

  3. Cook for 90min on Varoma and speed 2.  Then Place Veges in Varoma and extend cooking time by 30min.

  4. reserve 1 cup of cooking water and discard the rest.

     

  5. Wash and dry Closed lid

  6. Mustard Sauce
  7. Place egg, sugar, flour and mustard in Closed lid

    20 sec speed 2

  8. Set time for 8 min, Gentle stir setting temp 100.

    Slowly add in water and vinager.

    When mixture thickens season with salt and pepper to taste.

  9. Serve Meat and sauce hot or cold.

Tip

After cooking meat for 90min. You can add your vegetables to the Varoma or place in the simmering basket.

Vegetables could include carrots, potatoes, onions.

    Just made this, but instead of mustard sauce I made cheese sauce. The corned beef came out full of flavour and very tender.

    Overpowering sauce. 

    Sauce was SO strong - way too much mustard powder. Meat was okay - really salty though.  I'll stick to boiling the meat in juice.

    Very good recipe. Lovely stock for the sauce. Meat tender. Takes quite a long time, just need to calculate this! But well worth the effort. I had it with a bake, so did not add the vegetables.  Thank you for posting.
