Great - had to increase ingredients by 50% (except honey) to match 1kg of thigh chicken.
Whole can of Trident Coconut Cream (400ml) so no water.

And for more 'grown up' taste added a couple of tspns of Wholegrain mustard & extra Dijon

Quick & Delicious - Thank you for this great recipe. No more jar version for us! I used rice bran oil instead of coconut oil, and sour cream instead of coconut cream. I will omit the water next time. Was a little to runny but that is my only fault with this dish

Something the whole family will eat!

i used whatever veggies I had in the fridge, used coconut milk rather than cream, omitted the water, and used the butterfly to avoid shredding the chicken.

a bit creamy and sweet for me but was a hit with everyone else so will definitely be made again.

    Submitted by JudesStar77 on 27. September 2014 - 10:33.

I made this last night for my family who were visiting and it was a hit. I swaped in French "seedy" mustard and it was pretty much just as I remembered it tasting from the bottle when I was younger. It was a favourite then and we love it now. LOL I had not seen that if I wasn't avoiding dairy that I could use cream, but I had made some coconut milk and wanted to use it (I used the thick milk, the cream on top and used it insead of water). Also for a cheaper option I used chicken drumsticks with the butterfly. They needed a little longer to cook (about 15 minutes).

This was lovely, I cooked it minus the added vegies and put it in the Thermo Server, then I cooked the rice with both the veroma trays full of vegies diced pumpkin, sliced sweet potato and broccoli and then on top shredded cabbage, julienne carrots and zucchini, all of these steamed while the rice was cooking.  Served 4 Adults and 2 kids, no complaints from any of them.
