Hunters Chicken Breast Cacciatore and steamed veg

  • 300 g butternut pumpkin, cut into 3cm cubes
  • 3 --- carrots, peeled, ribboned
  • 1 --- Zuchini, ribboned (tagliatale strips)
  • 4 --- Brocoli florettes, 1 large each
  • 500 g chicken breast, cut into 3cm cubes
  • 2-3 sprigs basil, fresh, leaves only
  • 4 sprigs Parsley, flat leaf, leaves only
  • 2 spring onions, roughly chopped
  • 1 --- parsnip, roughly chopped
  • 2 sticks Celery, roughly chopped
  • 1/2 --- Capsicum, roughly chopped
  • 1 --- brown onion, halved
  • 2 cloves garlic
  • 2-3 --- Chillies, (optional)
  • 25 g Rice Bran Oil
  • 50 g Veg Stock Paste, from EDC or BCB recipe
  • 70 g tomato paste
  • 75 g dry white wine
  • 400 g Tinned tomatoes
  • 150 g water

      If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:
      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid. The simmering basket rests loosely on top, is steam-permeable, and also prevents food spatter from the mixing bowl.

Recipe's preparation

    Chicken Breast Cacciatore and steamed veg
  1. 1. Ribbon carrots and zuchini, cut brocolli and set aside together.

    2. Cut pumpkin and palce in Varoma bowl.

    3. Cut chicken and place on Varoma tray, season with salt and pepper, set aside.

    4. Place basil, parsley and spring onion in the TM bowl, chop 3sec/Sp 7, scrape down sides. Add parsnip, celery and capsicum. Chop 4sec/Sp4.5, set aside.

    5. Place onion, garlic and chillies (if using) in TM bowl, chop3sec/Sp 7, scrape down sides. Add oil, saute 3min/100*/Sp 1.

    6. Add chopped parsnip, celery, capsicum and herbs, stock paste, tomato paste, wine, tinned tomatoes and water. Place Varoma dish (with pumpkin cubes in) and Varoma tray on top (with chicken pieces) in position on TM bowl. Cook 14min/Varoma/Counter-clockwise operation/Sp 1. Add brocoli to Varoma bowl, cook 3min/Varoma/Counter-clockwise operation/Sp 1.

    7. Place chicken and pumpkin in the tomato/veg sauce in TM bowl. Place carrot and zuchini in Varoma bowl with brocoli. Position Varoma bowl in place on top of TM bowl. (Varoma tray is not needed now). Cook 10min/Varoma/Counter-clockwise operation/Sp 1.

    8. Check if vegetables are cooked, if not, steam a further 2-3min/Varoma/Counter-clockwise operation/Sp1.

Tip

This is an easy way for a flavoursome chicken and veg dinner that's healthy, with skinless chicken breast, but not dried out or with the chicken breaking up.

Frozen veggies can also be added to the sauce at step 7, peas, beans and corn. Sliced olives can also go in the sauce.

It's also delicious on a bed of mashed potato, make it first and keep warm in a Thermo Server bowl

    Really tasty and fresh. Love how many vegetables are in it. I would chop some carrot and zucchini and put with the pumpkin. Is like a stew so would be good served with pasta, rice, mashed potato or crusty bread. We had chilli in it which gave it a good kick!
