LCHF Leftover Chicken Salad

  • 130 g cooked chicken, cut into about 5 cm pieces, leftovers are great
  • 75 g ripe avocado, about half a small one
  • 60 g mayonnaise
  • 140 g broccoli, florets and stalk, about the same size as the chicken

Recipe's preparation

  1. 1. Place chicken, avocado, mayonnaise and broccoli into mixing bowl and chop 1 sec/speed 5, MC in place. Check salad and repeat if necessary. Serve and enjoy


Accessories you need



This is a very satisfying salad, full of healthy fats and plenty of protein. It's also an excellent way to add a serve of vegetables to your day. The broccoli stalks work really well in this dish - don't put them in your compost ever again!

Use any leftover cooked chicken for this recipe. I had some leftover breast from last night's dinner.
