Ingredients

Sauce

  • 1 brown onion
  • 20 g oil, macadamia
  • 50 g tomato paste
  • 560 g Passata, Mutli Organic or similar
  • 50 g water
  • 2 tablespoons vegetable stock concentrate, home made powdered
  • 1 tbsp dried basil
  • 1 tbsp dried oregano
  • 1/8 teaspoon cinnamon powder
  • 20 g Worcestershire sauce
  • 500 g mince, Beef, Lamb, or Pork
  • 350 g long grain rice
  • 1000 g water
  • 1 1/2 teaspoon salt
  • 20 g Butter

Recipe's preparation

    Sauce
  1. 1. Add peeled Onion to the mixing bowl and chop for 3 seconds on speed 5.

    2. Add Oil and Saute for 5 minutes, 100 degrees on speed 2. Without measuring cup.

    3. Scrape down the sides of the bowl and add Tomato Paste, Passata, Water and Vegetable stock.

    4. Cook for 5 minutes, 100 degrees, Reverse Speed 1.

    5. Add Basil, oregana, cinnamon and Worcesteershire sauce to the mixing bowl

    6. Break up your mince and add to the simmering basket.

    7. Insert simmering basket and cook for 15 minutes, 120 degree's on Speed 2

    8. Stir mince with spatular to break up and to ensure even cooking.

    9. Cook for a further 15 - 20 minutes, 120 degree's, speed 2.

    10. Once cooked set aside in Thermoserver

    11. Without washing bowl add water, salt and butter.

    12. Add washed rice to the steaming basket.

    13. Cook 18 minutes 100c at speed 3.

    14. Transfer to separate thermoserver and rest for a few minutes before serving up rice with bolanaise on top. Sprinkly with parmasan if desired.

    This technique of cooking mince can be usedfor bolognaise, lasagne, pasta bake, shepherds pie, meat pies. Just utilise the simmering basket and adjust the ingredients and cooking times as required.

    PLEASE ENSURE THERE IS ENOUGH LIQUID IN THE SAUCE TO STEAM YOUR MINCE IF YOUR USING THIS TECHNIQUE FOR OTHER MINCE DISHES.

    To add hidden veggies like Zuchinni, Carrot, or Pumpkin simply add desired amount with the Onion and Garlic in Step 1.
