Meatballs in Tomato & Onion Gravy with Zucchini "pasta"

  • 1000 g mince
  • 1 handful flatleaf parsley
  • 1 garlic clove
  • 2 Slices Bread
  • 1 egg
  • 2 shallots
  • 1 tbsp Mrs Balls Chutney
  • salt & pepper

Zucchini Pasta

  • 2 Zucchinis
  • 600 g Boiling water

Tomato & Onion Relish


Recipe's preparation

  1. MethodPlace 2 slices of bread in TM & mill for 10 secs, speed 8Set asideAdd parsley, shallots & garlic to bowl & chop for 5 secs / speed 5Add the mince, bread crumbs, egg, chutney & salt & pepper Mix for 15 secs / reverse / speed 4Line the bottom & top of the Varoma by wetting a piece of baking paper & squeezing out the excess water & lining the bottom (if you don't wet it - your meatballs will not cook.Roll the meat mixture into meatballs - my 1kg made 22 meatballs - Place half on the bottom & the rest on the top tray Add 600g kettle boiled water into the TM, place the varoma on top & steam for 15 mins / varoma/ speed 3In the meantime, start making your zucchini "pasta" by peeling lengthways with a peeler (I used 2 zucchini for 4 people)As soon as the meatballs are done, remove the meatballs from the bottom of the varoma & replace with your zucchini stripsCook for a further 3 mins / Varoma/ Speed 3If you cook your zucchini for longer, it will be mushyHeat you tomato & onion gravy & serve over the meatballs & zucchini!

Ingredients 2 large onions cut in half4 garlic cloves1 kg fresh tomatoes cut in quarters50g tomato paste20g butter20g olive oil1 tbs dried oregano1 tbs dried basilMethodAdd the onion & garlic to the TM & chop for 5 secs / speed 5You want your onions coarsely chopped, not mincedAdd your butter & oil & sauté for 6 mins/ aroma /reverse/ speed 1Add the rest of the ingredientsCook for 10 mins / varoma / reverse / speed 2

    I just went out and bought everything for this and now realise that there is no recipe for the tomato and onion gravy!
