Mel’s Veggie Packed Chunky Bolognese

  • 3 cloves garlic
  • 1 onion, quartered
  • 20 g olive oil
  • 2 carrots
  • 2 celery stalks
  • 1 broccoli, Stalk- peeled
  • 1 Capsicum
  • 6 fresh mushrooms
  • 1 zucchini
  • 1 sprigs fresh rosemary
  • 3 sprigs parsley
  • 2 sprigs oregano, fresh
  • 2 sprigs thyme leaf, fresh, (If you don’t have fresh herbs use a tbsp of dried Italian herbs)
  • 1 heaped tbsp beef stock paste
  • 400 g canned diced tomatoes
  • 140 g tomato paste, I tub
  • 50 g water, Or wine
  • 40 g Worcestershire sauce
  • 500 g Beef mince, Or pork/veal mince

      For cooking (simmering) at temperatures of 95°C or above (200°F), the simmering basket should always be used instead of the TM6 measuring cup, as the TM6 measuring cup fits tightly in the lid.       If you are using a Thermomix® TM6 measuring cup with your Thermomix® TM5:

Recipe's preparation

  1. Add pealed garlic cloves and onion, chop 4 sec, Sp 5
  2. scrape down sides of bowl, add oil and sauté 3 min, 100 °C, Sp1.
  3. Add the suggested veggies, diced into 4cm chunks (or whatever veggies you have) up to the Max line of bowl, placing the harder veggies at the bottom.
  4. Add your fresh herbs (stalks can be removed by pulling them through the splash guard holes)
    Or add a Tbsp of dried Italian herbs.
    Chop 5 sec, Sp 5, scrape down, and repeat.
  5. Scrape down the bowl and add the tomato paste and the tin of diced tomatoes. Rinse out the tin with about 1/4 cup of water or wine (to taste) and add it to the bowl.
  6. Add about 2 Tbsp or 40g of Worcestershire sauce and a heaped Tbsp of beef or vegetable stock paste.
  7. Add 500g of your preferred mince and stir with the spatula - just the top layer of ingredients, keeping the mince above the blades.
  8. Add a bay leaf and submerge with the spatula.
    Cook for 1 hr (45min at a minimum), 100 °C, Gentle stir settingSpoon stirring speed Counter-clockwise operation, Reverse.

Tip

Feel free to add your own ingredients or whatever veg you have left- just don’t go over the max mark of your bowl.
This recipe makes 2L of Bolognese sauce. I divide into 2 portions and freeze 1 of them. 1 portion feeds my family of 4 being 2 adults and 2 children.
