Mince Wellington

Ingredients

Mince filling

  • 2 onions, brown
  • 3 cloves garlic
  • 500 grams Beef Mince -
  • 55 grams breadcrumbs
  • 1 heaped tablespoon Dijon mustard
  • 2 Eggs.
  • 4 heaped tablespoons beef stock powder
  • 1 heaped tablespoon Dried parsley

Mushroom paste

  • 1 brown onion
  • 3 cloves garlic
  • 20 grams Butter
  • 150 grams Mixed mushrooms
  • 20 grams water

Pastry

  • 2 sheets Puff pastry, Or make your own
  • 1 egg, Lightly beaten
  • Sesame or Poppy Seeds for decoration, Optional

Recipe's preparation

    Mince filling
  1. 1. Chop onions and garlic for 3 seconds on speed 9

    2. Scrape down sides of bowl and add remaining filling ingredients mix to combine for 30 seconds building up to speed 5

    3. Pour into a greased loaf tin and bake at 180 for 40 minutes. Remove and allow to cool completely

  2. Mushroom paste
  3. 1. Rinse and dry TM bowl and blades

    2. Chop onion and garlic for 3 seconds on speed 9 

    3. Add 20g of butter and cook 5 mins/100 degrees/speed 5

    4. Add mushrooms and chop 5seconds/speed 5 

    5. Add 20g water and cook 10 mins/100 degrees/speed 1 

    6. Blend 20seconds/speed 6 - make sure you have the MC on!!! 

    7. Pour into a bowl and allow to cool

  4. Construction
  5. 1. Overlap pastry sheets to be big enough to wrap the wellington. 

    2. With the seam at the bottom pour on half the mushrooms paste and spread over an area the same size as your mince loaf. 

    3. Place mince loaf on top and top with remaining mushroom paste

    4. Wrap up the filling with the pastry. Slit the pastry 3 times (be decorative and weave pastry if you like) 

    5. Brush with egg and sprinkle seeds if using 

    6. Bake in 220 degree oven for 35 minutes then reduce to 180 degrees for a further 10 minutes

Tip

You can easily hide grated veggies in the mince mixture too. 

Don't add any salt as the beef stock has more than enough
