Mums thai green curry

Ingredients

Green curry paste

  • 2cm ginger, peeled and quartered
  • 1 tsp ground cumin
  • 2 stalks lemongrass
  • 5 kaffir lime leaves or zest of lime
  • 4 shallots
  • 3 garlic cloves, peeled
  • 1/2 bunch of coriander, roots and leaves
  • 1/2 bunch of basil leaves
  • 1 Tbsp Vegetable stock paste

Green curry

  • 270ml Ayam coconut milk
  • 3 Tbsp green curry paste
  • 500gm Chicken thigh, Cubed
  • 65gm coconut cream
  • 1 Tbsp fish sauce
  • 1 Tsp Brown sugar or raw sugar
  • Vegetables- Beans, Juliene strips of sweet potato, zucchini or carrot
  • Garnish Red chilli, Basil and coriander leaves

Recipe's preparation

    Curry paste
  1. 1. Place all ingredients into TM bowl and blend on speed 9 until paste consistency.

    2. Scrape down sides of bowl

    3. Leave 2 -3 Tablespoons of paste in the bowl and the rest maybe frozen into ice cube trays then into ziplock bags, freezes very well.

  3. 1. With the paste already in the bowl add half of the coconut milk and cook 3 min/Varoma/Speed 1 with simmering basket on top instead of MC

    2. Add remaining coconut milk and coconut cream and cook 7 mins/100oC/Counter-clockwise operationGentle stir setting with simmering basket on top instead of MC

    3. Add chicken and stock paste and cook 20 mins/100oC/Counter-clockwise operationspeed 1 with simmering basket on top instead of MC (chicken will release some liquid during cooking).

    4. Add sugar, fish sauce, sweet potato and zucchini and cook 5 mins/100oC/Counter-clockwise operationGentle stir setting with simmering basket on top instead of MC

    5. Serve with rice and garnish with basil, coriander and sliced chilli
