My Shepherd's Pie

Ingredients

Pie Filling

  • 1 onion, quartered
  • 2 clove garlic
  • 150 g mushrooms, sliced
  • 500 g Beef mince
  • 1 tbsp TM vegetable stock concentrate
  • 250 g water
  • 1 tbsp tomato paste
  • 1 tbsp olive oil
  • 500 g Frozen Mixed Vegetables

Potato Topping

  • 800 g potatoes, cubed
  • 40 g nuttelex or butter
  • 1 cup Milk or Water
  • 1/2 cup Shredded Cheese, (optional)

Recipe's preparation

    Pie Filling
  1. 1.  Preheat oven to 180 degrees. Place veggies into colander and let them thaw.

     

    2.  Dice potatoes and place in bottom of Varoma dish and set aside.

     

    3.  Place onion and garlic into Closed lid and chop for 5 seconds/speed 5

     

    4.  Add oil and saute 2 minutes/100 degress/speed 1

     

    5.  Add beef mince and cook 10 minutes/varoma/Counter-clockwise operation/speed Gentle stir setting. Place Varoma dish with potatoes on top of Closed lid.

     

    6.  Add vegetable stock, water, tomato paste, mushrooms and frozen veggies. Place Varoma back on the Closed lid and cook for 20 minutes/varoma/Counter-clockwise operation/speed Gentle stir setting

     

    6.  Remove Varoma, set aside. Place the filling into a casserole dish or ramekins and set aside. Clean Closed lid

     

     

  2. Potato Topping
  3. 1.  Place butterfly attachment into clean Closed lid

     

    2.  Add potatoes, Nuttelex and milk/water, mix for 30 seconds/speed 4. Repeat if you want the potatoes creamier.

     

    3.  Scoop potatoes on top of the filling mixture evenly making sure not to press down.

     

    4.  Sprinkle shredded cheese on now if using and place into the oven for 30 minutes or until topping is golden.

     

    5.  Remove from oven and let stand 10 minutes before serving.

Tip

Use Corn Flour (I used Gluten Free) to thicken if there is too much liquid.

    This really didn't work for me - big runny mess in the end tmrc_emoticons.( Also the potatoes took much longer to cook than what you've got here - I had to put them on at least for another half hour tmrc_emoticons.(

    Made this last night. Delicious..!!!  Will definitely cook again.  My kids, as usual, were afraid of the vegetables. Maybe next time ill try blending the veggies to hide them.
