Paleo Meatloaf

Paleo Meatloaf

  • 800 g Beef mince
  • 45 g flaxseeds
  • 2-3 sprigs parsley, I use the softer steams and leaves
  • 1 carrot, Quartered
  • 1 onion, Peeled & halves
  • 1 zucchini, Quartered
  • 2 celery stalk, Quartered
  • 2 cloves garlic
  • 2 eggs
  • 1 tablespoons Himalayan salt
  • 120 g coconut milk, Or other milk
  • 80 g tomato sauce, Good quality ketchup (4 Tablespoons)
  • 20 g honey, (1 Tablespoon)
  • 20 g apple cider vinegar, (1 Tablespoon)

Recipe's preparation

  1. 1. Preheat the oven to 180°C.
    2. Weigh 45g flaxseed and mill speed 9/10 seconds. Set aside in a big mixing bowl.
    3. Blitz parsley, speed 8/4 seconds. Set aside with flax.
    4. Grate carrot and celery, speed 5/4 seconds. Set aside (add to flax)
    5. Grate onion, zucchini & garlic, speed 5/3 seconds. Set aside with the rest.
    6. Set the big bowl on top of the TMX bowl so you can weigh and add all the other ingredients down to the coconut milk.
    7. Use your hands to mix it all together. Alternatively you could mix in the thermi bowl, but I've found I have to get in there and help it along all the time because there's too much in there so gave up on that method.

    8. Once it's all nicely mixed, pack into a greased or lined loaf tin. Bake in the oven for 25 minutes.
    9. While it's in there, give the thermomix bowl a quick rinse, the add the tomato sauce, honey & apple cider vinegar. Mix it speed 2.5/10 seconds.
    10. After 25 minutes, glaze the meatloaf with this mix then cook for another 25 minutes.

    11. Allow the meatloaf to rest for 10 minutes before turning out and serving.

Tip

Recipe is based on Pete Evan's "My Meatloaf" in Family Food. He wraps his in bacon which is probably delicious, but my family won't eat it so I haven't tried it that way. Feel free to add it!
